Turkey fillets with cucumber and garlic flower

(makes 6 servings)

In a dish, prepare a broth of Moût de pommes, water, carrots, onions, celery, Star anis, black pepper and 1/2 a package of fresh thyme.

Bring to a boil.

Add the turkey fillets and cook.

During this time, peel and remove the seeds from a cucumber which is then cut into strips.

Remove the cores from the apples and then cut into cubes with the skin still on.

Cut the leek in fine thin julienne slices.

Mix the cut vegetables in a bowl.

Cut the turkey fillets into fine strips.

Add them to the vegetables with the Garlic Flower, sour cream, Cayenne pepper, the the 1/2 package of chopped thyme and the salt and pepper.

Serve and cover with the mixture.

  • 750 ml. of Moût de pommes (sparkling)
  • 450 ml. of water
  • 1 thinly-sliced carrot
  • 1 chopped onion
  • 4 celery stalks
  • 1 package of fresh thyme or
  • 1 teaspoon of dried thyme
  • 1/2 teaspoon of black pepper seeds
  • 2 Star anise
  • 6 turkey strips (150 g. each)
  • 1 cucumber
  • 2 Cortland red apples
  • 1/2 leek
  • 2 tablespoons of Garlic Flower
  • 4 tablespoons of sour cream
  • Pinch of Cayenne pepper
  • Salt and pepper
